So I’ve been a fan of Little Debbie Oatmeal Creme Pies since I can remember. My grandpa worked for the company back when my mom was a kid, so I think it may actually be in my blood. A few months ago I attempted a different creme pie recipe, and while they were edible, they were a little hmm…intense. The cookies were too big, the frosting was too runny, eating one was a legitimate task – it took real planning and effort…
This time I got it right.
I followed this recipe pretty much spot on.
However, you can make the oatmeal cookies lower fat by replacing the egg and butter with 1/2 cup of applesauce and a small banana.
As you can see, I made the balls of cookie dough super small: about 1/3 to 1/4 of what I would do for a normal cookie. Remember, this is a cookie sandwich, so you eat two cookies at once. Tricky.
They ended up being even larger than I expected, but still manageable.
