Lemon Glazed Ricotta Beignets

Hello there, and happy Fun Food Friday!  I am fresh off the plane from St. Lucia and already back in the kitchen.

The trip was AMAZING.  The beaches were TO DIE FOR.
There was just one thing missing……
DESSERT!

The food was so tasty that we found it very hard to ever save room for something sweet.  So as you can imagine, I’m pretty dang excited about what’s about to go down here.

Let me begin by saying that I have never fried anything before and truthfully, I’m not a huge fan of fried foods.

Don’t worry corn dogs – you’re my dirty exception : )

I was dead set on figuring out how to bake these beignets versus sending them to oil town, but after 2 flights and 2 grocery trips, I barely have the energy to follow a recipe, let alone reinvent one.

So, here ya go.  Fried.  I can say with 99% certainty that this will be the only fried item you will ever see on Playing For Eats.  But remember: even fried foods fit (sparingly) into your life.

{mix up all of the ingredients for the dough}

{time to refrigerate.  I kept mine in there for about an hour, but it probably only needs about 20 minutes}

{prepare the sugar topping – I didn’t have cardamom, so instead I used a couple pinches of cinnamon and nutmeg}

{and then make that magical glaze – it’s heavenly.  I also added vanilla because doesn’t vanilla just make everything better….?}
